simple sweet limeade pie

This week was incredibly busy for me; but sometimes that just happens!

That being said, I thought this would be the perfect week for a tart but awesome Limeade Pie my dad showed me about a year ago.

As mentioned, this pie is definitely tart but oh man does it hit that sweet spot everyone has...as long as you like pies that is.

This pie is definitely easy to make; only including about 5 ingredients makes this by far the easiest of sweets. Of course it tastes just like a key-lime pie but uses frozen limeade juice instead. Oh, and also there is no baking involved! Woo hoo! Well, that is unless you want to make the crust slightly crunchier as I do. Hope you guys like this!

Limeade Pie
  • 1 graham cracker pie crust (9in)
  • 1/2 can of frozen limeade juice (12oz can) - chilled but not frozen
  • 1 can sweetened condensed milk (14oz) -chilled
  • 1 container cool-whip (8oz) - thawed
  • 1 pkg cream cheese (8oz) - room temperature
  • green food coloring

In a large mixing bowl mix can of sweetened condensed milk, chilled limeade juice and room temp. cream cheese until thoroughly mixed. (I chose to keep the cream cheese in small curds to allow added texture to the pie) Now add drops of green food coloring and mix in until you reach a desired color of your choice.Take the Cool Whip out of the fridge and fold it into the mixture (make sure you fold and do not mix as to keep in the air making it fluffy). If you aren't sure how to fold in the whip, watch this quick video linked here

Once well mixed with a large spatula, spoon in the pie filling into the graham cracker crust and shape as you feel looks best. Now place in the freezer for about an hour before you get to enjoy this delicious treat!
