s'more mugs

"Please sir, can I have s'more?" See what I did there? Whitty, I know. I found this little recipe a couple days ago and immediately knew this would be the next posting. When it comes to s'mores...I just can't resist. Fat kid? Yes. This little treat has long since been a favorite of mine, ever since I was a youngin'. Even now I still love the graham cracker-chocolate-marshmallow combination and the best parts about this recipe: under 5 minutes of cooking in the microwave. That's right, I said it. No oven this time, this one's super easy!


The recipe makes about 3 mugs comfortably and when I first made my friends try it they were a little hesitant until they took the first bite. Every time, each one's eyes grew wide and they couldn't believe it could tast so good. I can't help but agree...this is crazy delicious and super easy.



S'More Mugs (makes 3 normal sized mugs)
  • 6 tbsp graham cracker crumbs
  • 1 stick (8 tbsp) unsalted butter, melted
  • 4 tbsp sugar
  • 2 lg eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flower
  • 4 tbsp unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1/4 cup chocolate chips
  • 1 pkg of large marshmallows
Combine 6 tbsp butter and chocolate chips in a small bowl and melt in the microwave for 45 seconds then set aside. In another bowl, combine the remaining 2 tbsp melted butter with graham cracker crumbs and stir until moistened. Now press the crumbs into the bottom of your mugs.
In a separate bowl, whisk eggs, sugar and vanilla until smooth. Add in the flour, baking powder and cocoa and continue stirring until a thick batter forms. Now slowly poor in the melted chocolate chips and butter to combine thoroughly. Now add about a half inch of mixture on top the graham cracker crust of each mug. 
Take 2 marshmallows, tearing in half and place all 4 parts in a mug, repeat with the other 2 mugs. Add the remaining batter on top for each mug and then pop in the microwave for around 1 minute 30 seconds. Once done add some marshmallows to the top. From here you can either cook them for a few seconds to melt them slightly or if you're lucky enough to have a kitchen torch give them a little heat to make them nice and toasty! 
Sprinkle with some more graham cracker crumbs and enjoy a bit of nostalgia as you take your first bite in your gooey s'more mug!
